#9 Slow Cooker Italian Beef for Sandiches

SLOW COOKER ITALIAN BEEF FOR SANDWICHES

"Rump rost is a cooked with Italian salad dressing mix and seasongs until it is tender enough to shred with a fork."

INGREDIENTS:

3 cups water
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregan
1 teaspoon dried basil
1 teaspoon onion salt
1 teaspoon dried parsley
1 teaspoon garlic powder
1 bay leaf
1 (7 ounce) package dry Italian-style salad dressing mix
1 (5 pound) rump roast

DIRECTIONS:

1. Combine water with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix n a saucepan. Stir well, and bring to a boil.

2. Place roast in slow cooker, and pour salad dressing mixture over the meat.

3. Cover, and cook on low for 10-12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork.

4. Serve on hoagie rolls

#8 Potatoes - Best Ever Oven French Fries

I just figure 3 oz. of potatoes equals one WW point. So I weigh the potatoes and fix 3 points per person. The coating is for 2 large baking potatoes so double it if you are doing more! Really, really good!

Oven 425 degrees. Spray a nonstick pan with Pam. Combine and stir in a large bowl:

2 lighthly beaten egg whites
3/4 teaspoon cumin
1/2 tsp salt
1/2 tsp chili powder
1/4 tsp pepper

Peel the potatoes and cut into long thin strips. Toss in the bowl and coat. Place in a single layer on Pam sprayed cooking sheet. Spray it well, you don't want these to stick. Bake about 15 minutes. Then raise to highest level in oven and broil for about 10 minutes. WATCH them and don't leave them in too long. But this really crisps them up. Yum, yum! If they sit out for a bit before dinner, just broil a minute or two before serving to warm and recrisp!

#7 Dreamfield Spaghetti

This spaghetti is great! Steven found it and bought it because it is low in carbs. But it taste great and on WW it is only 3 points a serving. It tastes soooo much better than whole wheat. Trust me! I really, really like this sauce with it. It doesn't have that old "Tomatoey" flavor. Try it, you'll love it.

3/4 lb lean (I use 97% - on sale) hamburger
1 finely chopped onion
2 tsps minced garlic from the jar
1 chopped carrot
3 cups sliced mushrooms
1 can diced tomatoes
1 tbs tomato paste
1/2 tsp each basil, oregano
1/4 cup skim milk
1/2 tsp salt
1/4 tsp pepper

Cook hamburger, add onion and garlic, cook about five minutes - til soft. Add carrot, cook a couple of minutes. Add mushrooms, tomatoes and paste. Boil, reduce heat and cook for ten minutes. Add milk cook, uncovered for 15 minutes.

1 serving pasta and 1/8 sauce is about 5 points. A great meal!

#6 Chicken Enchilada Casserole for Thirty!


This recipe was used by the Spanish branch when they provided the Relief Society General Broadcast Dinner main dish. It is soooo easy and very economical for a crowd.

"Chilaquiles Americanos" (SERVES 30 modest portions)

2 bags family style restaurant chips
2 large cans cream of chicken soup
2 can original Ro-Tel tomatoes with chopped chiles
3 chicken breasts - not frozen
1/2 onion chopped
8 oz. yellow cheese
Salt to taste

Boil the chicken - shred. Reserve one cup of broth. Mix with soup, onion and Ro-Tel. Boil. Add salt to taste. Remove from heat and add chicken. Spray a large foil pan with cooking spray. Layer one layer of chips - do not crush. Layer the meat-soup mixture on top chips. Repeat until out of ingredients. Cover with foil. Top with cheese. Bake 20-30 minutes at 450 degrees.

#5 Cafe Rio

A friend of mine sent me these recipes and she swears they are authentic! I am not a big fan of the Cafe Rio pork because it is so sweet, but this does taste just like it! The dressing and rice are amazing---Amy


Creamy Tomatillo Dressing

1 packet Hidden Valley Ranch
1 c. buttermilk
3 tomatillos (chopped up)
2 cloves garlic
1 c. fresh cilantro
1 t. Cayenne pepper
add some lime juice
Blend all in a blender


Cafe Rio Pork
3-4 lbs pork
1 16oz salsa
1 can Coke (do not use diet)
2 c. brown sugar

Put pork in slow cooker and fill with water. Cook on High for 5 hours.
Drain off water and wash out slow cooker. Cut Pork in thirds and put
salsa, coke and brown sugar. Cook for 2 hours on high and an additional 1 hour on low.

Rice


1 lb long grain rice
1 bunch of cilantro, chopped
Juice from 2 limes
3 cloves of garlic
4 cups of water

Add 1 teaspoon of oil to skillet. Add rice and cilantro and garlic and
saute for 3-4 minutes.
Cook according to rice directions, but add lime juice to the water. For extra flavor, you can use some chicken broth in place of all or some of the water.

#4 Texas Cole Slaw


For Meredith - by request!

Make a day ahead and then mix the three parts at the last minute.
Or throw it together at the last minute. It serves a crowd!

Mix:
2 packages cole slaw
1 finely chopped green pepper
10 finely sliced green onions

Sautee in 2 teaspoons butter:
2 packages crumbled Ramen Noodles
3/4 cup slivered almonds
1/2 cup sunflower seeds

Mix the two parts together just before serving. You don't want to do it any sooner or the noodles lose their crunch.

Dressing: 1 cup oil
1/3 cup white wine vinegar
2/3 cup sugar
1 teaspoon salt
1 teaspoon pepper

Chill the dressing before serving.
