#6 Chicken Enchilada Casserole for Thirty!


This recipe was used by the Spanish branch when they provided the Relief Society General Broadcast Dinner main dish. It is soooo easy and very economical for a crowd.

"Chilaquiles Americanos" (SERVES 30 modest portions)

2 bags family style restaurant chips
2 large cans cream of chicken soup
2 can original Ro-Tel tomatoes with chopped chiles
3 chicken breasts - not frozen
1/2 onion chopped
8 oz. yellow cheese
Salt to taste

Boil the chicken - shred. Reserve one cup of broth. Mix with soup, onion and Ro-Tel. Boil. Add salt to taste. Remove from heat and add chicken. Spray a large foil pan with cooking spray. Layer one layer of chips - do not crush. Layer the meat-soup mixture on top chips. Repeat until out of ingredients. Cover with foil. Top with cheese. Bake 20-30 minutes at 450 degrees.
